  • 8 pieces flour tortillas
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can refried beans
  • 1/2 cup enchilada or taco sauce
  • 1 1/2 cups shredded cheddar and Monterey Jack cheese blend
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced black olives optional
  • 2 tablespoons chopped green onions optional
  • vegetable oil for frying

Method
 

Cooking Instructions
  1. Brown the ground beef in a skillet over medium heat. Drain excess fat and stir in taco seasoning with a splash of water. Simmer until thickened.
  2. Fry the tortillas in a little oil until golden and crispy on both sides. Drain on paper towels.
  3. Spread refried beans on one tortilla. Top with seasoned beef and then place a second tortilla on top.
  4. Spread a couple tablespoons of enchilada or taco sauce on top. Sprinkle with shredded cheese, diced tomatoes, and optional toppings.
  5. Bake in a 400°F oven for 8–10 minutes, or until the cheese is melted and bubbly.
