Ingredients
  

  • 4 pieces boneless skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • 8 ounces mushrooms, sliced
  • 1/2 cup chicken broth
  • 1 cup shredded Colby Jack or Monterey Jack cheese

Method
 

  1. Season chicken breasts with salt, pepper, garlic powder, and paprika.
  2. Heat olive oil in a skillet over medium-high heat and sear chicken for 5–6 minutes per side until cooked through.
  3. Remove chicken and set aside. In the same skillet, sauté onions and mushrooms until tender and lightly caramelized.
  4. Add chicken broth to deglaze the pan, scraping up browned bits.
  5. Return chicken to skillet and top with sautéed vegetables.
  6. Sprinkle cheese over each chicken breast, cover skillet, and cook on low until cheese melts.
  7. Serve hot, spooning extra pan juices over each serving.
