Ingredients
  

Chicken Filling
  • 1 lb ground chicken can substitute with turkey
  • 1 cup mushrooms finely chopped
  • 1 cup carrots shredded
  • 1 cup red bell pepper finely chopped
  • 3 cloves garlic minced
  • 2 tbsp soy sauce low sodium preferred
  • 1 tbsp fish sauce optional
  • 1 tbsp lime juice freshly squeezed
  • 1 tbsp brown sugar or honey
  • 1 tbsp vegetable oil for cooking
Lettuce Wraps
  • 1 head butter lettuce or iceberg lettuce
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup green onions sliced
  • 1/4 cup peanuts chopped, for garnish

Method
 

Prepare the Chicken Filling
  1. Heat vegetable oil in a skillet over medium heat.
  2. Add minced garlic and sauté for 30 seconds until fragrant.
  3. Add ground chicken and cook until browned, about 5-7 minutes.
  4. Stir in mushrooms, carrots, and red bell pepper; cook for another 3-4 minutes.
  5. Add soy sauce, fish sauce, lime juice, and brown sugar; mix well and cook for 1-2 minutes.
Assemble the Wraps
  1. Separate lettuce leaves and wash them gently.
  2. Spoon the chicken filling into the center of each lettuce leaf.
  3. Top with chopped cilantro, green onions, and peanuts.
  4. Serve immediately with lime wedges on the side.
