  • 2 cups cabbage shredded
  • 1 cup carrots shredded
  • 1 cup red bell pepper sliced
  • 1 cup cucumber sliced
  • 1/2 cup green onions chopped
  • 1/2 cup fresh cilantro chopped
  • 1/2 cup peanuts chopped
Spicy Lime Dressing
  • 1/4 cup peanut butter smooth
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice freshly squeezed
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon sriracha adjust to taste
  • 2 tablespoons water to thin dressing

Method
 

Prepare the Salad
  1. In a large bowl, combine the shredded cabbage, carrots, red bell pepper, cucumber, green onions, cilantro, and chopped peanuts.
  2. Toss the salad ingredients together until well mixed.
Make the Dressing
  1. In a separate bowl, whisk together the peanut butter, soy sauce, lime juice, honey, sriracha, and water until smooth.
  2. Adjust the consistency with more water if needed.
Combine and Serve
  1. Pour the dressing over the salad and toss to coat evenly.
  2. Serve immediately or refrigerate for up to 30 minutes before serving.
