- Wash and dry all fruits thoroughly. Core and dice apples and pears. Halve the grapes. Peel and segment the mandarins. Slice the banana if using.
- Whisk together honey and lemon or orange juice in a small bowl to make the dressing.
- In a large mixing bowl, gently combine all the fruits.
- Pour the citrus-honey dressing over the fruit and toss gently to coat.
- Top with pomegranate seeds and optionally garnish with mint or chopped pecans. Serve chilled or at room temperature.
