Ingredients
  

  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 medium onion, finely chopped
  • 1 medium carrot, finely chopped
  • 2 stalks celery, finely chopped
  • 3 cloves garlic, minced
  • 1 pound ground beef
  • 1/2 pound ground pork
  • 2 tablespoons tomato paste
  • 1 can (28 ounces) whole peeled tomatoes
  • 1 cup red wine
  • 1 cup whole milk
  • 2 leaves bay leaves
  • Salt to taste
  • Black pepper to taste

Method
 

  1. Heat olive oil and butter in a large pot over medium heat. Add onion, carrot, and celery. Sauté until soft and golden.
  2. Add garlic and cook for another minute until fragrant.
  3. Add ground beef and pork. Cook until browned, breaking it apart as it cooks. Season with salt and pepper.
  4. Pour in red wine and let it simmer until mostly evaporated.
  5. Stir in tomato paste and cook for 2 minutes. Add crushed whole tomatoes and bay leaves.
  6. Reduce heat and simmer uncovered for 2 to 3 hours, stirring occasionally.
  7. In the last 30 minutes, stir in milk and adjust seasoning to taste.
  8. Remove bay leaves before serving.
