- Combine all ingredients in a blender and blend until smooth.
- Let the batter rest for 30 minutes.
- Heat a nonstick skillet over medium heat and lightly grease it.
- Pour 1/4 cup of batter into the pan and swirl to coat evenly.
- Cook for 1–2 minutes, flip, then cook another 30 seconds.
- Repeat with remaining batter, stacking crepes with parchment between.
- Fill with sweet or savory toppings and serve.
