Method
 

  1. Add avocado oil to a heated skillet along with ground turkey, cumin, salt, and pepper. Cook the ground turkey until it is no longer pink, breaking it into small crumbles as it cooks. Once browned and fully cooked, remove it from heat and set aside.
  2. In the same skillet, add chopped red bell pepper and onion to sauté for about three minutes until they begin to soften. This step enhances their natural sweetness and infuses flavor into your skillet dish.
  3. Return the cooked ground turkey back into the skillet along with rinsed black beans, diced green chilis, enchilada sauce, and frozen corn. Cover the skillet and bring everything to a boil to meld all those wonderful flavors together.
  4. After bringing it to a boil, reduce heat to a simmer and mix in sliced corn tortillas evenly throughout the mixture in the skillet. Top off with shredded Mexican blend cheese and continue heating on low until melted.
  5. Once everything is hot and bubbly with melted cheese on top, spoon servings into bowls or plates for serving. Top each bowl with garnishes of your choice such as fresh cilantro, olives, queso fresco, slices of avocado, or dollops of sour cream for an extra touch of flavor!
