A vibrant and refreshing dish that captures the essence of the season, combining mixed greens, juicy oranges, tart pomegranate seeds, creamy feta cheese, and crunchy candied pecans.

Ingredients
  

  • 7 cups Mixed spring greens Choose a mix of your favorite greens for added texture.
  • 1 1/4 cups Orange segments Mandarins, oranges, clementines or tangerines.
  • 1/2 cup Pomegranate seeds These can be substituted with dried cranberries if desired.
  • 1/2 cup Feta cheese Crumble for creaminess and tang.
  • 1/2 cup Candied pecans Roughly chopped for crunch and sweetness.
  • 1/3 cup Olive oil Forms the base of your dressing.
  • 1 tablespoon Honey Adds natural sweetness.
  • 2 teaspoons Dijon mustard Provides a little kick to the dressing.
  • 2 tablespoons Apple cider vinegar Brightens up the salad.
  • 1 tablespoon Shallot Minced for aromatic depth.
  • to taste Salt and pepper Essential seasonings to enhance all flavors.

Method
 

  1. Wash mixed spring greens thoroughly under cold water, then dry them and place in a large mixing bowl.
  2. Segment citrus fruits by cutting away the peel and pith, then slice out individual segments and add to the bowl with greens.
  3. Sprinkle in pomegranate seeds and crumble feta cheese over the top.
  4. Roughly chop candied pecans and add them to the bowl, then toss everything gently.
  5. In a separate bowl, whisk together olive oil, honey, Dijon mustard, apple cider vinegar, shallots, and salt and pepper.
  6. Drizzle the dressing over the salad mixture, toss gently, and serve.
