  • 1 clove garlic (grated)
  • 1/3 cup breadcrumbs
  • 1/4 cup grated Parmigiano-Reggiano cheese
  • 1 large egg
  • 2 tablespoons chopped fresh chives
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon chopped fresh basil
  • 1 teaspoon chopped fresh oregano
  • Pinch of salt and pepper
  • Tomato sauce (for dipping)

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet with olive oil or parchment paper.
  2. Grate zucchini and drain it well using a clean kitchen towel to remove excess moisture.
  3. In a mixing bowl, combine drained zucchini, grated garlic, breadcrumbs, Parmigiano-Reggiano cheese, egg, chives, parsley, basil, oregano, salt, and pepper. Mix until well combined.
  4. Shape the mixture into small balls or patties and place them on the prepared baking sheet about an inch apart.
  5. Bake in the preheated oven for about 15 minutes or until golden brown.
  6. Serve warm with marinara sauce for dipping.
