This recipe is a celebration of summer’s bounty! With every swirl of dough comes layers upon layers of flavor—juicy peaches mingling with warm spices and a rich cream cheese glaze that ties everything together beautifully. Whether you’re hosting brunch or simply indulging on a quiet Sunday morning, these rolls promise to bring joy to your table and warmth to your heart.

Ingredients:
Now that we’ve set the scene, let’s gather our ingredients as we embark on this delicious adventure together! Each component plays a crucial role in crafting these beautiful rolls, so let’s dive into what makes them so special.
- 1 1/2 cups fresh ripe peaches (cubed). Fresh peaches are the star of this show! Their sweetness and juiciness will infuse our rolls with flavor that screams summer. When selecting peaches, look for those that yield slightly to pressure—this indicates ripeness. You want them fragrant and vibrant in color; avoid any that feel rock-hard or have blemishes. If fresh peaches aren’t available, you can substitute with high-quality canned peaches packed in juice or light syrup. However, nothing quite compares to the burst of fresh fruit!
- 2 tablespoons granulated sugar. This little addition helps balance out the natural tartness of our fresh peaches while enhancing their sweetness during cooking. The sugar also encourages caramelization when baked, leading to those lovely golden edges we all adore. Feel free to experiment by using brown sugar here for deeper flavor notes if that’s your preference!
- 1 teaspoon lemon juice. A splash of lemon juice brightens up our filling beautifully! It not only adds a refreshing zing but also serves to prevent oxidation in our peach slices, keeping them vibrant and colorful throughout baking. It’s surprising how such a small quantity can make such a significant difference!
- 2 teaspoons cornstarch. This ingredient acts as our thickening agent for the peach filling, preventing it from becoming too watery as it bakes. Cornstarch helps create that perfect gooey texture reminiscent of traditional cobbler filling! Make sure to mix it well with the sugar before adding it to your fruit for an even distribution.
- 1 tablespoon water. Just enough water to help dissolve our cornstarch into a smooth slurry before combining it with the peach mixture ensures consistent results without clumps forming. This step is often overlooked but absolutely essential for achieving that perfect filling!
- 1/2 cup very thinly sliced peaches (for the filling). These thin slices will intermingle beautifully within our roll dough! By slicing them thinly, you allow them to soften quickly while baking, creating delightful pockets of peach goodness throughout each bite.
- 2/3 cup water. Essential for hydrating our dough during mixing! The right amount ensures our yeast can activate properly and helps create a soft texture we crave in homemade cinnamon rolls.
- 1/4 cup bread flour (see notes below for measuring). Using bread flour instead of all-purpose flour gives us better structure due to its higher protein content—this means chewier rolls with an ideal fluffy interior! If you’re new to bread-making, don’t worry; it’s easier than it sounds.
- 3 2/3 cups bread flour (see notes below for measuring). The bulk of our dough comes from this ingredient! Again, its gluten-forming properties will contribute significantly towards achieving those lovely airy swirls we’re after.
- 1/3 cup granulated sugar. Another layer of sweetness here! This sugar interacts wonderfully with both yeast and butter in our dough mixture—providing not only flavor but also contributing to browning during baking which gives us those irresistible golden tops.
- 2 teaspoons instant yeast. Yeast is what brings life into our rolls! Instant yeast is great because you can mix it directly into your dry ingredients without needing proofing time—it’s all about convenience!
- 1 teaspoon fine sea salt. Salt is absolutely paramount in balancing flavors—it brings out sweetness while controlling fermentation rates during rising periods.
- 1/3 cup whole milk (room temperature). Whole milk contributes richness and moisture to our dough along with helping dissolve sugar easily when combined at room temperature!
- 1/3 cup heavy cream. Think liquid gold—heavy cream enriches both texture and flavor immensely! It guarantees soft rolls by providing fat content which inhibits gluten formation leading towards tenderness throughout each bite.
- 1 large egg (room temperature). Eggs add structure while enriching flavors—a must-have component in any enriched dough recipe like ours here!
- Tangzhong (from recipe above). If you’ve never tried this method before—it’s where magic happens! A simple roux made from flour and water creates an incredibly moist final product by retaining moisture well during baking—a technique I highly recommend you implement here!
- 1 teaspoon vanilla paste or extract. Vanilla enhances overall flavor profiles making everything taste even more delicious; it’s worth splurging on high-quality extracts if possible.
- 6 tablespoons unsalted butter (softened). We need softened butter so it incorporates smoothly into our dough creating air pockets leading toward fluffiness once baked—we want every bite heavenly soft!
- 1/2 cup unsalted butter (room temperature). The use of room-temperature butter ensures proper creaming when combined with other ingredients resulting in fluffy texture overall—avoid melted butter unless specified as it can change consistency drastically.
- 2/3 cup brown sugar. Dark brown sugar contributes wonderful molasses flavors while also ensuring moisture retention within crumb topping layers—both necessary qualities here!
- 1 teaspoon ground cinnamon. Cinnamon brings warmth plus its iconic sweet-spicy aroma which pairs perfectly alongside ripe fruit flavors within this dish—it wouldn’t be complete without it!
- 1/2 cup all-purpose flour. This plays an important role in forming our crumb topping—it should always be measured correctly since differences could lead towards varying results texture-wise especially when baked atop sugary mixtures!
- 1 tablespoon granulated sugar. Just another bit more sweetness added into crumb mixtures elevates textures even further once cooked through providing contrast against softer elements below too!
- 1 teaspoon ground cinnamon. Doubling down on cinnamon never hurt anyone! Adding this again enhances aromatic qualities plus flavor layering throughout each bite enhancing overall enjoyment levels tenfold too!!
- 3 tablespoons unsalted butter (melted). Allows easy incorporation into crumb topping mixture ensuring buttery goodness through every layer—don’t skip this step unless absolutely necessary please!!
- 4 tablespoons unsalted butter (room temperature). Extra benefit derived from having room-temperature vs cold butter goes beyond just taste alone—it allows smooth blending yielding desirable textures we strive towards achieving here today!!
- 2 ounces cream cheese (room temperature). Cream cheese makes everything richer plus adds tanginess balancing sweetness perfectly rounding off flavors harmoniously across entire dish!!
- 1 cup powdered sugar. Powdered sugar dissolves quickly allowing us creamy frosting-like glaze intended atop baked goods once cool enough serve giving final touch needed elevate presentation wise!!!
- *2 ½ tablespoons heavy cream. Heavy creams assistively thins down frosting consistency ensuring drizzling capabilities remain intact providing visual appeal too!!!
When combined thoughtfully together step-by-step these components reveal wonderful surprises awaiting discovery ahead throughout process leading towards finished product endearing hearts everywhere arrived ultimately filled joyfully shared moments together enjoyed fondly around tables gatherings alike!!!

Step 5: Preparing the Peach Filling – A Symphony of Sweetness
Now that we have our dough resting comfortably, it’s time to focus on that luscious peach filling! This step is not just about mixing ingredients; it’s about coaxing out the natural sweetness and flavors of those ripe peaches. Start by cubing your fresh peaches into bite-sized pieces; this should be about 1 1/2 cups. Don’t shy away from using perfectly ripe peaches—this is where your filling gets its character, so pick juicy ones that smell heavenly! Toss these peach cubes into a mixing bowl and sprinkle them with 2 tablespoons of granulated sugar and a teaspoon of lemon juice. Why the lemon juice, you ask? It’s all about balancing flavors and enhancing the natural sweetness of the peaches while preventing browning. Let this mixture sit for about 10-15 minutes so that the sugar has time to draw out the juices, creating a syrupy base.
Next, we’re going to thicken this delightful concoction with cornstarch. Combine 2 teaspoons of cornstarch with 1 tablespoon of water in a small bowl until you have a smooth slurry. Once your peaches have macerated beautifully, pour this slurry over them and mix gently to combine. Place the mixture in a small saucepan over medium heat. As it warms, stir frequently until it begins to bubble and thicken—this should take around 3-5 minutes. You will know it’s ready when it coats the back of a spoon, transforming into what can only be described as liquid gold! Set this aside to cool slightly before incorporating it into your cinnamon rolls; trust me when I say these layers are what will make each bite profoundly satisfying.
Step 6: Making the Dough – The Heart and Soul
Let’s dive into making our dough, which is truly the heart and soul of these Peach Cobbler Cinnamon Rolls with Crumb Topping! In a large mixing bowl or stand mixer, combine 1/4 cup of bread flour with 2/3 cup of water to create our Tangzhong—a technique borrowed from Asian bread-making that ensures an incredibly soft texture. Cook this mixture over medium heat until it thickens (about 3-5 minutes), constantly stirring to prevent any lumps from forming. This step may seem like extra work, but I promise you it’s absolutely paramount for achieving that pillowy softness we all crave in cinnamon rolls!
Once your Tangzhong is ready, let it cool slightly before adding in the remaining ingredients: start with 3 2/3 cups of bread flour, 1/3 cup granulated sugar, 2 teaspoons instant yeast (this doesn’t need proofing!), and 1 teaspoon fine sea salt for seasoning—all foundational elements in creating that perfect dough structure. Then add in your room-temperature milk and cream, an egg, and lastly, your cooled Tangzhong along with a teaspoon of vanilla paste or extract for depth of flavor. Mix this all together until a shaggy dough forms before turning it out onto a lightly floured surface to knead. Kneading is where the magic happens! Use both hands to push down and fold over the dough repeatedly for about 8-10 minutes until you achieve that lovely elasticity—feel free to channel your inner baker here! You want a smooth ball that springs back when poked gently; if it’s too sticky, don’t hesitate to sprinkle in more flour as necessary.
Step 7: First Rise – Patience is Key
At this stage, we’ve created something special—a beautiful dough just waiting to rise! Transfer your kneaded dough into a greased bowl, ensuring it’s coated lightly with oil on top to prevent drying out during its rest period. Cover it snugly with plastic wrap or a clean kitchen towel; I recommend finding a warm spot in your kitchen—it could be near an oven that’s been preheating or simply on the countertop under some cozy blankets! Allow it to rise until doubled in size, which should take approximately one hour depending on how warm your kitchen is. This rising period is crucial because during this time yeast ferments and produces carbon dioxide gas, creating those fluffy air pockets within our rolls.
Don’t rush this step! If you check after an hour and it hasn’t quite doubled yet—don’t fret—let it go for another 15-30 minutes if needed. The goal here is patience because a well-risen dough means lighter rolls that melt in your mouth. While you wait for this magical transformation to happen, take some time to daydream about how incredible these rolls are going to taste once they fill your home with their intoxicating aroma!
Step 8: Assembling Your Rolls – Layers of Love
With our dough now perfectly risen like fluffy clouds at dawn, it’s assembly time—and oh my goodness is this where things get exciting! Begin by lightly punching down the risen dough (it feels oddly satisfying!) before transferring it onto a lightly floured surface once again. Gently roll out the dough into a rectangle measuring approximately 18×12 inches; you’re looking for an even thickness of about half an inch throughout. This uniformity ensures consistent baking later on as well as evenly distributed filling—which is non-negotiable when we talk about flavor!
Once you’ve rolled out your canvas of deliciousness, spread softened unsalted butter (6 tablespoons) generously across its surface—don’t hold back here! Butter adds richness and helps our filling stick while also ensuring every bite has that decadent quality we crave. Next comes our star ingredient—the peach filling! Evenly distribute half a cup of very thinly sliced peaches over the buttered surface along with those beautifully thickened peach juices you’ve prepared earlier. Now sprinkle this layer joyfully with brown sugar (two-thirds cup) mixed with one teaspoon ground cinnamon—imagine each swirl carrying hints of caramelized sweetness mingling with fresh fruitiness as they bake together.
Starting at one long side of the rectangle (think rolling up a sleeping bag), gently roll up the dough tightly but without squishing too much; keep everything secure but not overly compacted—that would hinder proper rising later on! Once rolled up completely, pinch seams to seal them tightly before slicing into twelve equal pieces using either dental floss or a sharp knife—both methods yield clean cuts without squishing those gorgeous layers inside.
Baking Your Perfect Peach Cobbler Cinnamon Rolls with Crumb Topping
The anticipation builds as we prepare for baking; let’s sprinkle some magic dust on top before these beauties enter their final phase! For our crumb topping—a buttery blend that’s both rich and crunchy—you’ll combine half a cup all-purpose flour with two-thirds cup brown sugar along with one teaspoon ground cinnamon in another bowl while cutting in three tablespoons melted unsalted butter until crumbly (think sandy texture). This mixture will add delightful contrast against our gooey interior once baked!
Step 9: The Grand Bake – Transforming Dough Into Delight
Preheat your oven to 350°F (175°C) as you prepare for what I consider one of life’s greatest pleasures—the moment when raw dough transforms into golden-brown perfection! Arrange those sliced rolls snugly in an oiled baking dish ensuring they’re almost touching; allow them space because they will puff up beautifully during baking due to their rich yeast content partnered with that magnificent crumb topping you’ve just prepared.
Before placing them into their warm oven abode for approximately thirty minutes—keep an eye on them towards the end—they should emerge gloriously golden-brown on top while still maintaining soft centers underneath; you can test doneness by gently pressing down on one roll—the spring-back indicates they’re perfectly cooked through without being dry or dense.
The aroma wafting through your kitchen will be utterly intoxicating—it’s like being wrapped in warmth itself! Once baked beautifully golden brown atop swirls filled generously with peach goodness beneath—a sight so glorious—it deserves applause alone! Let them cool slightly while you whip up that luscious cream cheese glaze which ties everything together seamlessly.
Final Touches: Cream Cheese Glaze – The Icing on Our Dream
To finish off these Peach Cobbler Cinnamon Rolls with Crumb Topping magnificently—you’ll need room-temperature cream cheese combined harmoniously with powdered sugar (one cup)—whisk together until smooth alongside heavy cream until drizzling consistency forms (around two-and-a-half tablespoons). Trust me when I say this glaze takes things over-the-top as it cascades down each warm roll like silky ribbons dripping decadently from above.
Now drizzle liberally atop each roll once they’ve cooled ever so slightly but are still warm enough for soaking up all that dreamy sweetness—feel free to lick any excess off spatulas because… why wouldn’t you? Each bite now stands tall draped under creamy goodness paired wonderfully alongside vibrant notes from fresh peaches beneath surrounded by spiced cinnamon embracing everything together harmoniously!
And there you have it—your masterpiece awaits!
