  • 2 tablespoons avocado oil
  • 2 garlic cloves, minced
  • 1 teaspoon Italian seasoning

  • 8 oz. grape tomatoes, halved
  • 8 oz. fresh mozzarella balls
  • 2 tablespoons fresh basil, chopped
  • 2 lb. boneless skinless chicken breasts

Instructions

  1. Preheat oven to 400°F.
  2. In a bowl, whisk together balsamic vinegar, honey, avocado oil, minced garlic, Italian seasoning, and Dijon mustard.
  3. In another bowl, combine halved tomatoes, mozzarella balls, and basil; season with salt and pepper.
  4. Heat avocado oil in a large oven-safe skillet over medium-high heat. Season chicken with salt and pepper; sear for 1-2 minutes per side until golden brown.
  5. Pour balsamic sauce over the chicken and add the tomato mixture on top.
  6. Transfer the skillet to the preheated oven and bake for 18-23 minutes until chicken reaches an internal temperature of 165°F.
