  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 large egg yolk
  • 1 tablespoon vanilla extract

  • 2/3 cup semi-sweet chocolate chips
  • 1/4 cup semi-sweet chocolate chips (extra)
  • 1/4 cup unsweetened Dutch cocoa powder
  • 2/3 cup all-purpose flour
  • 1 tablespoon all-purpose flour (extra)
  • 1 teaspoon espresso powder
  • 1/2 teaspoon fine sea salt
  • 45 Biscoff cookies (for the top)
  • Extra cookie butter (for the top)

Instructions

  1. Preheat oven to 350°F (180°C) and line an 8×8 inch metal baking pan with parchment paper.
  2. In a medium bowl, mix together the brown sugar, granulated sugar, eggs, and vanilla until creamy.
  3. Melt the butter and semi-sweet chocolate chips together until smooth. Whisk in cocoa powder.
  4. Fold the chocolate mixture into the sugar mixture until combined.
  5. Gently fold in flour, espresso powder, and salt until just mixed.
  6. Pour half the batter into the prepared pan, then layer with chilled cookie butter followed by remaining brownie batter.
  7. Top with crushed Biscoff cookies and drizzle extra cookie butter over the top.
  8. Bake for 30-40 minutes or until a toothpick comes out with moist crumbs. Allow to cool before cutting.
