  • 1 cup quinoa
  • 10 oz red enchilada sauce
  • 4 oz diced green chiles
  • ½ cup corn kernels
  • ½ cup canned black beans
  • 2 tablespoons chopped fresh cilantro
  • ¾ cup shredded cheddar cheese (divided)
  • ¾ cup shredded mozzarella cheese (divided)
  • 1 avocado (diced)
  • 1 Roma tomato (diced)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large saucepan, cook rinsed quinoa with 2 cups water over medium heat until liquid is absorbed (about 15 minutes). Fluff with a fork and set aside.
  3. In a mixing bowl, combine cooked quinoa, red enchilada sauce, green chiles, corn, black beans, cilantro, cumin, chili powder, salt, pepper, and half each of the cheddar and mozzarella cheeses.
  4. Transfer half the mixture into a greased 9 x 13 baking dish. Layer remaining mixture on top and sprinkle with remaining cheeses.
  5. Bake for 15 minutes until bubbly and golden. Let rest for 5-10 minutes before serving.
  6. Garnish with diced avocado and tomatoes before enjoying.
