  • 2 cups jasmine rice
  • 4 cups low-sodium chicken broth
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 red bell pepper, diced
  • 1 cup snap peas, trimmed
  • 1 cup corn kernels (fresh or frozen)
  • 3 green onions, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • Salt and pepper to taste
  • Fresh cilantro and sesame seeds for garnish

Instructions

  1. Rinse the jasmine rice under cold water until it runs clear.
  2. In a medium saucepan, combine rinsed rice with chicken broth. Bring to a boil, then reduce heat to low and simmer for about 15–20 minutes until liquid is absorbed.
  3. While the rice cooks, heat olive oil in a large skillet over medium-high heat. Sauté garlic and ginger for about 30 seconds.
  4. Add diced red bell pepper and snap peas; stir-fry for approximately 4 minutes until softened but still crunchy.
  5. Add the shrimp to the skillet and cook for another 3–4 minutes until they turn pink.
  6. Stir in corn kernels along with soy sauce, sesame oil, rice vinegar, salt, and pepper; cook for another minute to combine flavors.
  7. Serve the shrimp mixture over jasmine rice, garnished with sliced green onions, fresh cilantro, and sesame seeds.
